Easy Bean and Cheese Burritos are a quick meatless dinner that everyone will love! This recipe only takes 15 minutes to make and is full of flavor! Tortillas are filled with seasoned refried beans, topped with cheddar cheese and rolled into burritos, then warmed in the oven.

Like it or not, dinner needs to happen every night. I'm all about simple, quick, AND tasty recipes so that's how this recipe for Easy Bean and Cheese Burritos came to be.

No stress about needing to pull out meat to thaw or needing to prep anything in the morning. You just literally pull out a can of refried beans, a few other ingredients and within 15 minutes a delicious, family-friendly recipe is ready!

Bean and Cheese Burritos

Look at how simple the ingredients are:

  • Tortillas
  • A can of Refried Beans
  • Salsa
  • A few seasonings: Chili Powder, Cumin, Oregano, Onion & Garlic Powder.
  • Shredded Cheese

That's it!

But trust me, simple doesn't mean average. These are so tasty! Crispy tortilla, melty cheese, tasty beans. You'll love it!

Refried Beans and Cheese Burritos

How to make these Easy Bean & Cheese Burritos:

1- Preheat the oven to 400 F. Gather together your ingredients. If you use the uncooked tortillas, cook them on the stovetop first.

2- In a bowl, mix together the refried beans, salsa, and seasonings.

3- Spread the bean mixture down the center of the tortilla.

4- Top with cheese and roll-up.

5- Bake for 5-7 minutes, until cheese is melty and beans are warm.

Ingredients

  • 1 (16 oz.) can refried beans
  • ¼ cup salsa
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ oregano
  • ¼ teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • ½-3/4 cup shredded cheese
  • 8 medium tortillas

Instructions

Preheat oven to 400 degrees F.

In a medium bowl, add the refried beans, salsa, chili
powder, cumin, oregano, onion, and garlic powder. Stir until smooth. Spread
about ¼ cup of the bean mixture on the tortilla in the center. Top with 2-3 tablespoons
of cheese. Fold the edges of the tortilla towards the center, then roll up,
tucking in all the filling.

Place on a baking sheet, seam side down. Spray with cooking
spray and sprinkle lightly with salt.

Bake for 5-7 minutes, or until beans are heated and cheese
is melted.

Let cool slightly then serve.

Serve with salsa, sour cream, guacamole, shredded lettuce, diced
tomato, hot sauce etc.

Notes

Add ½ tablespoon enchilada sauce to the burrito
before wrapping it up for even more flavor!

Make-Ahead: Once burritos are assembled (before baking) store in the fridge for up to 1 week.

To freeze: Once burritos are assembled, wrap each burrito in plastic wrap and then foil. Place in a gallon-sized Ziploc freezer bag. Seal bag, removing as much air as possible. Freeze for up to 3 months. To serve from frozen, remove the plastic wrap and foil, place on a microwave-safe plate, cover with a damp paper towel. Heat in the microwave until warmed through, about 1-2 minutes.
